NEW DELHI: Radisson Delhi’s in-house Oriental cuisine specialized chef extraordinary Nima Tshering Lepcha has been recognised as the winner of the MasterChef Oriental Cuisine Award at the 17th International Chef Awards 2020, organised by Indian Culinary Forum. Radisson Delhi’s Thai Restaurant Neung Roi which is all set to reopen its doors again has also won many accolades and is rated as Delhi’s best Thai restaurant. Interestingly the menu is inspired by cuisines from four distinct culinary traditions of Thailand namely ‘Isan’ which has simple dishes with intense flavors, uncompromisingly bold and spicy.

‘Lanna’, where the primary seasoning characteristics cuisine is hot and salty. Cuisine from the ‘Isthmus of Kra’ i.e. the south is influenced by culinary styles of neighboring Myanmar and Malaysia as also coastal India and is extremely spicy. ‘Central Plains’ offers a broader range of flavors and dishes, hot and salty are the dominant tastes, the use of a broader range of seasoning leads to multiple flavors, textures, and tastes in a single dish.

The decorative detail even on bite-size ‘Porpia Sod’ Phuket style fresh vegetable spring roll, ‘Gai Yang’ grilled chicken with coriander roots and roasted chili sauce is embedded in the Chefs. ‘The Tom Kha Gai’ chicken & coconut milk broth is redolent with lemongrass, chilies, and a savory edge from kaffir lime. The ‘Yam Som O’ A tangy salad made from Pomello and ‘Yam Pla Krob’ fluffy and crispy fish salad with a flavourful pineapple and lime chili sauce, was simply delightful.

For the main course I go for the ‘Pla Phad Smoonprai’ deep-fried fish with Thai herbs, ‘Phad Pak kiew’ stir-fried kale with morning glory, Pok Choy, soya bean sauce, garlic and pepper along with ‘Khao Suay’- Steamed rice. It is refined, with the Chef integrating the multitude of aromatic spices to a tangy, sweet, spicy, and savory whole. To end on a sweet note go for the ‘Khao Niew Mamuang’ sticky rice with fresh mango and coconut cream.
